Ingredients

  • 1 tablespoon olive oil optional
  • 2 c onion diced
  • 2 c carrot diced
  • 2 c celery diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 poblano pepper diced
  • 3 garlic minced, cloves
  • 2 tablespoon tomato paste
  • 1 tablespoon chili powder
  • 1 tablespoon thyme
  • 1 tablespoon Mexican oregano
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 8 c vegetable broth
  • 1 c corn
  • 2 c spinach packed, fresh
  • 1 ½ c quinoa or . 8.5 oz pkg Seeds of Change Organic precooked quinoa, brown + red rice and flaxseed blend, cooked
  • 1 ½ c brown rice
  • 1 ½ c barley
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste

Instructions

  1. In a large pot, over medium heat, add 2 tablespoon water or 1 tablespoon vegetable oil if you prefer. Add bell peppers, poblano, carrots, onion, celery, and garlic.
  2. Saute until vegetables have softened, about 5-10 minutes.
  3. Add tomato paste, thyme, chili powder, paprika, cumin, and Mexican oregano. Stir to coat vegetables and cook 1 minute.
  4. Add diced vegetable, stock and corn. Stir and bring to a boil over medium high heat. Turn heat to medium-low, cover and simmer for 15-20 minutes.
  5. Stir in the package of quinoa, rice, and flaxseed, spinach, salt and pepper. Simmer, uncovered for 15 minutes. Taste and add salt and pepper to taste.Serve hot and enjoy!

Notes

  • If you can't find a pre-cooked whole grain blend, you can use any combination of cooked brown rice, wild rice, quinoa, barley, or any other whole grains you like.
  • Taste before adding salt and adjust accordingly. Different brands and homemade stocks contain differing amounts of salt.
