The Best Pork Chop Marinade

The Best Pork Chop Marinade combines olive oil, brown sugar, garlic, lemon juice, Worcestershire sauce, white wine vinegar, mustard, salt, and pepper to infuse bone-in center-cut pork chops with balanced sweet and tangy flavors. Marinated for several hours, the chops are seared to form a crust and then baked to a juicy finish. This process helps retain moisture and tenderness, producing flavorful pork chops suitable for a family meal or special dinner.

Description

The Best Pork Chop Marinade uses a blend of olive oil, brown sugar, garlic, lemon juice, Worcestershire sauce, white wine vinegar, ground mustard, salt, and pepper. This combination provides acidity and sweetness that tenderize the bone-in center-cut pork chops while infusing prominent savory notes. The pork chops are marinated between 2 and 8 hours to maximize flavor absorption.

Cooking involves searing the chops in a hot oven-safe skillet to develop a browned crust, then finishing them in the oven at 400°F until internal temperature reaches 145°F. This method helps lock in juices and produces a tender, evenly cooked chop with a caramelized exterior. Resting the meat after cooking allows the juices to redistribute for better texture.

This dish pairs well with side vegetables or starches and can be adapted to various meal occasions due to its straightforward preparation and familiar flavors. The marinade’s balance avoids overpowering the pork, emphasizing the natural taste of the meat enhanced with aromatic and tangy elements.

Ingredients

Servings
  • 4 pork chops bone-in, center cut
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons brown sugar
  • 5 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon white wine vinegar
  • 1 teaspoon ground mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place pork chops into a resealable plastic bag. In a small bowl, make the marinade by whisking together olive oil, brown sugar, garlic, lemon juice, Worcestershire sauce, white wine vinegar, ground mustard, salt, and black pepper.
  2. Pour marinade into the bag and over the pork chops. Seal and turn the bag gently to coat the chops in the marinade. Transfer to the fridge to marinate for 2-8 hours.
  3. To cook, preheat an oven-safe heavy skillet over high heat and preheat the oven to 400 degrees Fahrenheit. Remove the chops from the bag and discard the marinade.
  4. Sear the chops for 2 minutes on each side and then immediately transfer the skillet with the chops to the oven. (Alternatively, transfer the chops to a baking dish.) Bake until the internal temperature of the chops reaches 145 degrees Fahrenheit, about 15 minutes.
  5. Remove the chops from the oven and set aside to rest for 5-10 minutes before serving. Season with additional salt and black pepper to taste.
