Ingredients
- 2 pounds red potatoes quartered, baby
- ⅓ cup mayonnaise
- ⅓ cup sour cream
- 1 ½ tablespoons Dijon mustard
- 1 tablespoon lemon juice freshly squeezed
- 2 teaspoons lemon zest
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 2 celery diced, ribs
- 3 tablespoons capers chopped
- 3 tablespoons parsley leaves fresh, finely chopped
- 3 tablespoons dill finely chopped, fresh
- 2 green onions thinly sliced
- egg quartered, 4, soft boiled
Instructions
- Place potatoes in a large saucepan and cover with cold salted water by 1 inch. Bring to a boil and simmer until just tender, about 15 minutes; drain well and let cool.
- In a large bowl, whisk together mayonnaise, sour cream, Dijon, lemon juice and lemon zest; season with salt and pepper, to taste. Stir in celery, capers, parsley, dill, green onions and potatoes until well combined. Cover and chill for at least 4 hours to 2 days.
- Serve, topped with eggs.
