  • 1 cup ricotta cheese
  • 1/2 cup milk
  • 4 egg large
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • neutral cooking oil for cooking, generic cooking oil

Instructions

  1. Combine ricotta cheese, milk, eggs, vanilla extract and sugar. Stir until well combined.
  2. In a separate bowl combine flour with baking powder. Add flour mixture to the ricotta mixture, and mix just until combined.
  3. Lightly coat a skillet with oil and preheat over medium heat. Pour about 1/4 cup of batter into the hot skillet. Fry pancakes until bubbles appear on top and both sides are golden brown, flipping once.
  4. Serve with your favorite toppings while they are still hot.
