These are the BEST Southwest chicken egg rolls! It's a colorful combination of corn, black beans, fresh veggies, shredded cheese, and chicken. This tasty mixture is flavored in savory southwest seasonings then fried in a crispy egg roll wrapper. These won't last long at your next party!

  • 1 1/2 cups chicken cooked and cubed
  • 1 cup black beans drained and rinsed
  • 1 cup corn drained and rinsed
  • 1 cup red bell pepper chopped
  • 1/4 cup green onion sliced
  • 2 jalapeno pepper seeded and finely chopped
  • 1/2 cup spinach chopped
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Monterey jack cheese shredded
  • cooking oil for frying
  • egg roll wrappers about 20
  • cilantro ranch dressing for serving

Instructions

  1. In a medium-sized mixing bowl, combine 1 1/2 cups chicken, 1 cup black beans, 1 cup corn, 1 cup red bell pepper, 1/4 cup green onions, 2 jalapeños, and 1/2 cup spinach,.
  2. Add 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon garlic powder, 1/2 teaspoon salt, 1/4 teaspoon pepper, and shredded 2 cups Monterey Jack cheese,. Mix until incorporated.
  3. Place one of the egg roll wrappers, on a clean surface so that it is a diamond. Spoon about two tablespoons of the mixture into the center. Wet the sides of the wrapper with a little bit of water. Fold up the bottom half and then tightly fold in the sides and roll up. Repeat until you have used all of the egg roll wrappers.
  4. In a large skillet, add the oil for frying until it is about an inch up the side of the pan and heat to medium-high. Add the egg rolls and fry for about 1-2 minutes. Flip and cook the egg rolls until they are golden brown.
  5. Serve with your favorite dipping sauce like cilantro ranch dressing,.
