The Best Tequeños
Description
This recipe for The Best Tequeños starts by forming a dough from all-purpose flour, salt, baking powder, eggs, melted butter, and warm water. The dough is kneaded until smooth and rested briefly. Meanwhile, semi-soft white cheese is cut into sticks about 3/4 inch thick. The dough is rolled thin into a rectangle, then cut into long strips that are diagonally wrapped around each cheese stick. The wrapping is sealed by rolling on a flat surface to prevent cheese leakage during frying.
The wrapped cheese sticks are fried in vegetable oil heated to 350°F, cooking until the dough is golden and crisp on the outside. This creates a satisfying contrast between the crispy exterior and the gooey melted cheese inside. The cooking technique ensures the cheese is fully melted without overheating the dough. The fried Tequeños are drained on paper towels before serving.
These Tequeños are ideal finger foods for gatherings or snacks and can be served warm to highlight the melted cheese texture and the flaky crust.
The recipe notes that Tequeños can be prepared in advance and frozen raw, then fried from frozen or reheated after par-frying. This allows for convenient preparation ahead of time without losing quality in texture or flavor.
