  • 16 oz semi-soft white cheese
  • 3 cups all-purpose flour
  • 2 egg
  • 2 teaspoons salt
  • 1/4 teaspoon baking powder
  • 2 tablespoons butter melted
  • 1/2 cup water warm
  • 1 1/2 cups vegetable oil for frying

Instructions

  1. Place flour in a bowl. Add the salt and baking powder. Mix
  2. Add the eggs and mix with a wooden spoon
  3. Add the butter and stir
  4. Finally add the warm water and knead with your hands until the dough is smooth
  5. Cover and let it rest for 10 minutes
  6. Meanwhile, cut the cheese into 3/4" sticks
  7. With a rolling pin, roll the dough into a rectangle, 1/4" thick
  8. Use a pizza cutter or knife to slice the rectangle into long strips
  9. One at a time, wrap the cheese stick diagonally using each strip. Make sure that the cheese is completely enrobed. Roll the Tequeño on the table to ensure that the edges are sealed. Repeat with the rest of the cheese and strips
  10. Heat oil to 350 Degrees F
  11. Fry 4-5 Tequeños at a time until golden brown. Remove form the oil and drain with a paper towel. 

Notes

  • Tequeños dough can be frozen raw and fried directly without thawing.
  • You can fry tequeños briefly, freeze them, and later reheat in a toaster oven for convenience.
