Description

This vegan eggnog starts with cashews soaked for several hours to soften them, then blended with unsweetened almond or light coconut milk and Medjool dates. Nutmeg and vanilla extract provide the classic warm spices associated with traditional eggnog. A pinch of sea salt balances sweetness.

The mixture is blended until completely smooth and creamy, resulting in a rich texture without dairy or eggs. Tasting allows adjusting nutmeg and dates to preferred spice and sweetness levels.

  • 1 cup cashew nuts soaked 4 hours, raw
  • 3 cups almond milk or light coconut milk, unsweetened
  • 6 Medjool dates pitted
  • 1 tsp ground nutmeg
  • 1/2 tsp vanilla extract pure
  • 1 pinch salt sea salt
  • 3 to 4.5 ounces brandy optional

Instructions

  1. Place the raw cashews in a bowl and cover with 2 inches of water. Soak at least 4 hours (up to 10). 
  2. Drain cashews and place them in a high-powered blender with the rest of the ingredients. Blend on high for 3 minutes (or until eggnog is completely smooth).
  3. Taste eggnog for flavor and add more nutmeg or more dates to taste.
  4. Pour into fancy glasses and enjoy! Eggnog can be served warm or chilled.
