The Best Wild Rice Salad Recipe

This Wild Rice Salad brings together cooked wild rice with fresh grapes, almonds, blue cheese, and green onions, tossed in a citrus miso vinaigrette. The salad features a mix of nutty, tangy, and creamy flavors with varied textures: chewy rice, crisp almonds, juicy grapes, and crumbly blue cheese, complemented by the citrus-and-miso dressing that balances acidity and umami.

Description

The salad starts by cooking wild rice in vegetable or chicken broth until tender, then allowing it to rest and cool for better texture and separation of grains. The citrus miso vinaigrette blends white miso paste, freshly squeezed orange and lemon juice, red wine vinegar, and oil into a smooth, emulsified dressing that adds brightness and a savory note.

Combining the cooled wild rice with halved seedless grapes, slivered almonds, crumbly blue cheese, and sliced green onions creates a balance between earthiness, sweet juiciness, crunchy nuts, and creamy cheese. The seasoning of salt and ground black pepper complements the elements without overpowering the fresh, natural flavors.

This salad is an attractive side dish or light meal, suitable for serving chilled or at room temperature. It provides contrasting textures and flavors that refresh the palate, making it a versatile addition to various menus.

For quicker preparation, the wild rice can be cooked in an Instant Pot following specific timing and natural pressure release to ensure tenderness and faster cooking.
