Ingredients

  • 2 cups rice cooked
  • 1 cup chicken thigh cut into bite-sized pieces, skinless, boneless; or chicken breast
  • 3 tbsp soy sauce divided
  • 2 tbsp mirin divided, or a little sugar as a substitute; see notes
  • 2 tbsp vegetable oil divided, or sesame oil
  • 2-3 garlic minced, cloves
  • 1 cup mixed vegetables frozen
  • salt to taste
  • black pepper to taste
  • 2 green onions chopped
  • sesame seeds optional for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken pieces with 2 tablespoons of soy sauce and 1 tablespoon of mirin. Let it marinate for at least 15 minutes.
  2. Cook the Chicken: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the marinate chicken and cook until golden brown and cooked through. Remove from pan and set aside.
  3. Sauté the Garlic and Vegetables: In the same skillet, add the remaining oil and minced garlic. Sauté for about 30 seconds, then add the frozen mixed vegetables. Cook until the vegetables are heated through.
  4. Add Rice and Season: Add the cooked rice to the skillet, breaking up any clumps. Stir in the remaining soy sauce and mirin, mixing well.
  5. Combine and Serve: Return the cooked chicken to the skillet and mix everything together. Season with salt and pepper to taste. Garnish with chopped green onions and sesame seeds if desired. Serve hot and enjoy!
