The Classic Chicken Gizzards Gravy

The Classic Chicken Gizzards Gravy combines sautéed onions and grated carrots with tender chicken gizzards simmered in a seasoned flour-thickened sauce. The gravy develops a rich, hearty texture and a delicate balance of savory flavors, enhanced by bay leaves during simmering. It can be served over hearty grains like barley or staples such as mashed potatoes or rice, making it suitable for comforting family meals.

Description

The Classic Chicken Gizzards Gravy uses chicken gizzards cooked with diced onions and grated carrots, forming a base upon which the gravy is thickened with flour. After sautéing the vegetables until golden and browning the gizzards, the flour is incorporated before adding water and bay leaves for a slow simmer. This slow cooking tenderizes the gizzards and melds the flavors into a rich gravy. The resulting sauce is savory with a hint of sweetness from the carrots and aromatic notes from the bay leaves.

The gravy is versatile and can be spooned over grains such as barley or a simple bed of mashed potatoes or rice, providing a filling meal component. The texture balances the slight chew of the gizzards with a smooth, thickened sauce.
