The Lava Flow Drink

The Lava Flow Drink blends pineapple juice, cream of coconut, half-and-half, and strawberries to create a layered, creamy tropical beverage. Strawberry puree is combined with an icy coconut-pineapple mixture to form a colorful drink with a swirling “lava flow” effect. This frozen-style drink is refreshing and visually appealing with a tropical fruit flavor balance.

Description

The Lava Flow Drink mixes pineapple juice, cream of coconut, and half-and-half to create a rich and creamy tropical base. Fresh or thawed strawberries are pureed to a thick syrupy texture and combined with a coconut-pineapple icy mixture made by blending with ice until slushy. Pouring the icy coconut mixture into the strawberry syrup creates a layered effect mimicking flowing lava, giving the drink a unique appearance and texture.

Sweetness and creaminess come from the cream of coconut and half-and-half, balanced by the bright fruitiness of pineapple and strawberries. The drink is served immediately to maintain the icy, slushy texture. Garnishing with fresh pineapple enhances the tropical feel.

This drink is typically prepared fresh due to the icy components melting over time. Keeping components refrigerated before assembling helps maintain chill without premature melting. It is a non-alcoholic, fruity beverage well-suited for warm weather or as a festive, visually striking refreshment.

Ingredients

Servings
  • 3 ½ cups pineapple juice
  • 2 cans cans (15-ounces each) cream of coconut (like Coco Lopez brand)
  • 1 cup half-and-half fat-free or regular
  • 24 ounces strawberries slightly thawed until slushy in texture, frozen, in syrup
  • ice
  • pineapple if desired, fresh, for garnish

Instructions

  1. In a blender, puree the slightly thawed strawberries with 1/2 cup water. The mixture should be syrupy and thick. Transfer to a liquid measure, bowl or pitcher and set aside.
  2. In a pitcher, whisk together the pineapple juice, cream of coconut and half-and-half.
  3. In a blender (washed from pureeing the strawberries), fill up halfway with ice. Pour in the coconut/pineapple mixture until it comes up to an even height with the ice. Blend until slushy (add more coconut/pineapple mixture if it is too thick to blend easily).
  4. Pour about an inch of the strawberry syrup mixture into a cup. Pour the icy coconut/pineapple mixture into the center of the strawberry mixture in the cup until the cup is filled. If desired, gently swirl the mixture with a straw.
  5. Garnish with fresh pineapple, if desired, and serve immediately.

Notes

  • Cream of coconut is non-alcoholic and often found in the mixed drinks aisle.
  • Keep components refrigerated before assembling to maintain their cold temperature.
  • Prepare the drink shortly before serving to preserve the icy consistency.
