Ingredients
- 3/4 cup Greek yogurt nonfat, 2% or full fat, plain, 170g
- 1/4 cup Parmesan Cheese do not use the already shredded kind!, freshly grated, 28g
- 2 Tbsp lemon juice, (30g
- 1 Tbsp mayonnaise light, 15g
- 1 Tbsp olive oil 15g
- 1 tsp anchovy paste 5g
- 5-6 liquid stevia or sweetener of choice - optional but it elevates the flavor!, drops
- 1 clove garlic minced
- salt to taste, fresh cracked
- black pepper to taste, fresh cracked
Instructions
- Add all ingredients to a blender or food processor along with 1/8 tsp salt and a few cracks of pepper. Blend until smooth. Taste and add any additional salt, pepper, mustard, parmesan, etc. as needed.
- Store in a jar or airtight container. For best results, allow dressing to chill for 30 minutes before serving. Log dressing separately so you can add as much or little as you wish!
Notes
- Use freshly grated Parmesan cheese rather than pre-shredded for better flavor and texture.
- A good quality Greek yogurt improves dressing creaminess and taste.
