The Perfect 5-Minute Gravy Recipe

This recipe yields a smooth and silky meat gravy, combining rendered fat, flour, and meat stock or drippings. With fat as the base, flour is whisked in to create a roux that thickens as stock is added gradually. The resulting gravy has a balanced texture that is rich yet not overly heavy, providing a classic complement to meats and side dishes like mashed potatoes or stuffing. Its simple ingredients and quick method make it practical for enhancing meals where drippings are available.

Description

The Perfect 5-Minute Gravy Recipe relies on rendering fat from meat drippings or using butter as the fat base. Slowly whisking flour into the hot fat forms a roux, which cooks briefly to eliminate raw flour taste. Adding meat stock or drippings in small portions while whisking ensures a smooth sauce without lumps. Bringing the mixture to a simmer activates thickening, producing a gravy that coats dishes evenly. This technique enhances flavor from the drippings or broth and achieves a traditional texture that complements roasted or grilled meats.

This gravy works well poured over turkey, mashed potatoes, stuffing, rice, or other similar side dishes, adding moisture and savory depth. It can be made fresh with drippings after cooking meat or prepared with stock when drippings aren't available, offering versatility.

Ingredients

Servings
  • 1/2 cup fat from drippings or butter
  • 1/2 cup flour
  • 1 qt meat stock or drippings

Instructions

  1. Divide the fat from the meat drippings. You can do this manually by letting the fat naturally rise to the top and harden before you skim it off, or you can use a fat separator if you have one.If you're not using meat drippings, skip to the next step.
  2. Place the fat or butter into a deep skillet and bring it to a simmer.
  3. Slowly whisk the flour into the melted fat/butter, continuing to whisk the mixture until everything is well-combined. Cook for an additional 2 minutes.
  4. In small portions, whisk the drippings/stock into the flour mixture until silky smooth. Bring the mixture to a simmer and immediately remove it from heat.
  5. Serve the gravy while it's piping hot. Enjoy over turkey, mashed potatoes, stuffing, rice, and so much more!
