Three Cheese Stuffed Balsamic Chicken

Four boneless skinless chicken breasts are stuffed with a blend of provolone, mozzarella, and Italian cheeses, then seasoned with herbs and garlic powder. After searing in a butter and honey glaze, the chicken cooks in a balsamic vinegar and brown sugar sauce that caramelizes in the oven. The combination of melted cheeses inside the tender chicken and the sweet-tangy glaze outside creates a rich, flavorful main dish ideal for baking in an oven-safe skillet or transferring to a baking dish.

Description

Three Cheese Stuffed Balsamic Chicken features chicken breasts filled with sliced provolone, shredded mozzarella, and Italian blend cheese. The chicken is seasoned with oregano, thyme, basil, garlic powder, salt, and pepper, then seared in a skillet with butter and honey. A sauce made from balsamic vinegar and brown sugar is added before transferring the pan to the oven to bake. The baking step melts the cheeses inside and caramelizes the balsamic glaze around the chicken, providing a balance of savory, creamy filling and a slightly sweet, tangy exterior.

The preparation involves carefully creating pockets in the thickest part of the chicken to hold the cheese and securing them with toothpicks. Using a large oven-safe skillet allows the dish to move directly from stovetop browning to oven baking, finishing the proteins in the glaze for about 15-20 minutes. Serving suggestions include spooning the reduced balsamic sauce over the cooked chicken and optionally topping with fresh basil for a bright finish.

For cooks without an oven-safe skillet, the method can be adapted by searing the chicken in a regular pan and transferring everything to a casserole or baking dish to finish baking. This recipe emphasizes layered flavors from the trio of cheeses combined with the sweet honey-butter and balsamic brown sugar sauce.

Ingredients

Servings
  • 4 chicken breast boneless skinless
  • 1 tablespoon neutral cooking oil generic cooking oil
  • salt to taste
  • black pepper to taste
  • ½ teaspoon oregano thyme, and basil, dried
  • ½ teaspoon garlic powder
  • 4 provolone cheese sliced
  • ½ cup mozzarella cheese shredded
  • ½ cup italian blend cheese shredded
  • 2 tablespoons butter
  • 2 tablespoons honey
  • ½ cup balsamic vinegar
  • 3 tablespoons brown sugar

Instructions

  1. Preheat oven to 375 degrees. Use a sharp knife to cut a pocket horizontally in the thickest side of each chicken breast, being sure not to cut all the way through.
  2. Place one slice of provolone cheese in the pocket, topped with 1/4 of the mozzarella, and 1/4 of the six cheese Italian. Use toothpicks to close and secure the opening.
  3. Drizzle chicken breasts with olive oil. Season with salt and pepper, oregano, thyme, basil, and garlic powder and use your fingertips to rub seasonings into the chicken.
  4. In a large oven-safe skillet (see note) over medium-high heat, melt butter. Once almost melted, add the honey and stir until mixture bubbles. Add chicken and brown on each side for 2-4 minutes. Whisk together the balsamic vinegar and brown sugar, pour over chicken and cook 2 minutes longer.
  5. Transfer pan/skillet to oven and bake for about 15-20 minutes until chicken is cooked through and cheeses are melted. Spoon balsamic sauce from the pan over the chicken, top with fresh basil if desired, and serve.

Notes

  • If you don’t have an oven-safe skillet, sear the chicken in a regular pan and transfer to a baking dish for the oven step.
