Tiramisu Chia Pudding

This viral tiramisu chia pudding is easy to make and packed with 29 grams of protein! It has all the flavors of the classic dessert and is the perfect healthy treat to enjoy any time of the day.

Ingredients

  • 2 Tablespoons chia seeds
  • ½ cup almond milk unsweetened
  • ½ coop (14.5 grams) plant-based vanilla protein powder I used Truvani*
  • 1 hot (1.5 oz) espresso
  • 5.3 oz container yogurt or 150 grams of your favorite yogurt, vanilla, low sugar, Siggi's brand
  • cocoa powder for dusting on top

Instructions

  1. Combine chia seeds, almond milk, protein powder and espresso in a small bowl or container. Stir to combine, until all protein powder is incorporated. Let mixture sit for about 5 minutes, stir again to break up clumps.
  2. Top with a lid and place in the fridge for a few hours (or overnight).
  3. Remove from fridge, stir and top with a layer of yogurt, dust cocoa powder on top and serve.

Notes

  • Yogurt: If using a plain yogurt you might want to add a splash of vanilla extract and maple syrup to the mixture. 
  • No protein powder?  You can totally skip this if you want. Just mix everything together, including the yogurt and add 1-2 teaspoons of maple syrup if desired.
  • Storage: Store your tiramisu chia pudding in an airtight container in the fridge for up to 5 days. I recommend waiting to dust your chia pudding with cocoa powder until right before serving.
