Toffee Brownie Cookies Recipe

Toffee Brownie Cookies blend the richness of bittersweet chocolate and cocoa with the crunch of toffee bits. The cookie dough has a soft, fudge-like texture from melted chocolate and butter combined with sugar and eggs. Baked into small rounds, these cookies offer a chewy, chocolaty bite accented by caramelized toffee for a contrast in texture and sweetness.

Description

This recipe starts by melting bittersweet chocolate and butter together to create a rich, smooth base. Eggs and sugar are beaten until combined, then mixed with coffee and vanilla for depth of flavor. Dry ingredients including flour, cocoa powder, baking powder, and salt are folded in carefully to maintain the soft texture. Toffee bits are incorporated and reserved bits are sprinkled on top before baking. Cookies are portioned as soft dough balls to ensure a tender crumb and chewy center after baking at a moderate temperature. The toffee adds a crunchy surprise and sweetness that balances the dark chocolate notes.

The brownies bake for just under a quarter of an hour and are cooled on baking sheets to hold their shape. The resulting cookies have a fudgy middle with a slight crust on edges and toffee distributed throughout adds texture and salty caramel flavor. They make a satisfying dessert or treat paired with coffee or milk.

Ingredients

Servings
  • 8 ounces bittersweet chocolate chopped or chips
  • 4 tablespoons butter unsalted
  • 1 cup granulated sugar
  • 3 egg large
  • 1 teaspoon instant coffee
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 3 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 ounces Toffee bits

Instructions

  1. Preheat the oven to 325 degrees F. In a double boiler (or in the microwave) gently melt the chocolate and butter. Stir until all the chocolate melts.
  2. In an electric mixer, beat together the sugar and eggs until combined. Add the instant coffee and vanilla and beat again. Scrape the bowl with a spatula.
  3. Add the hot melted chocolate, baking powder, and salt. Scrape the bowl again. Then slowly add the flour and cocoa powder.
  4. Finally stir in the toffee chips, reserving 1/4 cup for the tops.
  5. Line cookie sheets with parchment paper. Form the cookie dough into 1 tablespoon balls and place on baking sheets, leaving 2 inches between the dough balls. The dough is very soft, so flour your hands.
  6. Bake for 11-12 minutes. Once out of the oven, immediately sprinkle the tops with extra toffee chips. Cool on the baking sheets.
