Description

This Toffee Chex Mix recipe uses a blend of cereal, crackers, nuts, and pretzels tossed in a warm toffee sauce. The toffee is created by boiling butter, brown sugar, corn syrup, and salt, then incorporating baking soda and vanilla to form a foamed coating. Stirring the mixture thoroughly before baking helps ensure an even, crisp coating on the snack mix.

Baked at a low temperature for multiple intervals with stirring, the mix achieves a crunchy texture with a rich caramel sweetness offset by the saltiness of crackers and nuts. The toffee coating adheres well, giving each component a satisfying glaze without becoming sticky or soggy.

Ingredients

  • 4 cups rice chex or corn chex
  • 2 cup saltine crackers minis
  • 1 cup nuts assorted, unsalted or lightly salted
  • 1 cup pretzels sticks or mini knots
  • 1/2 cup butter unsalted
  • 1 cup dark brown sugar
  • 6 tablespoons light corn syrup
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions

  1. Position rack in the center of your oven. Preheat to 225 F. Line a large rimmed baking sheet with a silicone baking mat.**
  2. In a large mixing bowl, combine cereal, nuts, Saltines, and pretzels. Set aside.
  3. Place a large saucepan over medium heat, and melt the butter.***
  4. Once the butter has melted, stir in the brown sugar, corn syrup, and salt.
  5. Bring the mixture to a boil, stirring frequently.
  6. Allow the mixture to boil for 2 minutes, and then remove from the heat.
  7. Whisk in vanilla extract, and then add the baking soda, mixing well. The toffee will foam. Continue whisking until well-combined. 
  8. Pour the hot toffee over the cereal mixture, and carefully fold to coat the cereal mixture with the toffee mixture. The cereal mixture doesn't have to be perfectly coated.
  9. Spread the cereal mixture in an even layer on the prepared baking sheet.
  10. Bake 15 minutes. 
  11. Carefully stir the cereal to coat with melted toffee.
  12. Continue baking for 15 minutes, stir, and then bake for another 10-15 minutes. 
  13. Remove from oven, and then toss one more time. 
  14. Spread into an even layer, and let cool. 
  15. Break into pieces to serve. 

Notes

  • You can replace nuts with extra cereal, crackers, or pretzels if preferred.
  • Use a half sheet pan or two smaller pans to give enough space for the toffee to foam while baking.
  • Choose a pan large enough to accommodate foaming toffee mixture when adding baking soda.
