Description

This recipe separates egg whites and yolks to create a light and airy batter. The yolks are blended with vanilla bean paste and aromatic spices including cinnamon, allspice, cloves, and nutmeg, giving the batter a warming and festive flavor. Whipped egg whites stabilized with cream of tartar are gently folded into the yolk mixture, providing volume and a fluffy texture.

After incorporating powdered sugar to sweeten the batter, it becomes thick and luscious. Traditionally, 2 to 4 tablespoons of this batter are added to a hot mug, then mixed with boiling water or, for a creamier texture, warm milk. Spiced rum can be added for an alcoholic variation, making it a rich and comforting drink often enjoyed during colder months or festive occasions.

  • 6 large egg
  • 2 teaspoons vanilla bean paste
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves ground
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon cream of tartar
  • 1 pound powdered sugar
  • spiced rum
  • water boiling

Instructions

  1. Separate egg whites and yolks and put each in a different medium-sized mixing bowl.
  2. Set the bowl with the egg whites to the side.
  3. In the bowl of the egg yolks add vanilla bean paste, cinnamon, allspice, cloves, and nutmeg.
  4. Mix to combine, set aside.
  5. In the bowl with the egg whites add the cream of tartar.
  6. Using a handheld mixer, whip the egg whites until stiff peaks form, set aside.
  7. Going back to the egg yolk mixture, add half the powdered sugar, and using the handheld mixer, beat together until combined.
  8. Add in the rest of the powdered sugar and try your best to combine the mixture. It will be very thick. This is normal.
  9. To the egg yolk mixture add half the egg whites and using the handheld mixer combine until smooth.
  10. Fold in the remaining half of the egg white mixture.
  11. At this point, the batter should be luscious and thick.
  12. To make a cocktail add 2-4 tablespoons of the batter into an 8-ounce mug along with (optionlly) 1-ounce spiced rum.
  13. Very slowly pour in hot water while using a spoon to stir the mixture and the hot water together. If you skip this step you will curdle the mixture as it contains raw eggs. If made correctly the cocktail will have a nice foamy head and be completely smooth.

Notes

  • Substitute warm milk for water to achieve a creamier texture in the cocktail.
  • Use 2 tablespoons of batter for smaller mugs and 4 tablespoons for larger mugs to match traditional serving sizes.
  • The recipe scales easily and can be halved or doubled to suit the number of servings.
