Ingredients

  • 5 tomatillos husked, washed and dried
  • 3 Roma tomato
  • 1 jalapeño
  • 1 anaheim chili
  • 3 garlic cloves
  • ½ red onion
  • 2 teaspoons salt
  • 1 teaspoon cumin
  • ¼ cup cilantro
  • lime juice from 1 small

Instructions

  1. Roughly chop your tomatillos, tomatoes, garlic, chilies, jalapeño, and onion, and saute them in a pan or pot with about ¾ cup of water and salt and cumin.
  2. After about 15 minutes (or when it's all cooked down and everything is soft) turn off the heat and add the cilantro and lime juice. Salt to taste.
  3. In a blender or food processor, process until smooth.

Notes

  • Cooking the vegetables until soft helps achieve a smooth blend and mellows raw flavors.
  • Heat levels can be adjusted by omitting or reducing jalapeño and Anaheim chili.
  • To create a tangier, chunkier salsa, skip cooking and blend the ingredients raw.
  • Exclude tomatoes for a vibrant green salsa with sharper acidity.
