Tomatillo Salsa Verde
Description
This Tomatillo Salsa Verde recipe starts by simmering husked and quartered tomatillos with onion, garlic, jalapeño, cilantro, cumin, sea salt, water, and lime juice. Cooking softens the tomatillos and melds the flavors, mellowing some of the tomatillos’ sharpness and the jalapeño’s heat. After simmering about 15 minutes, the mixture is blended with an immersion blender until smooth or to the desired consistency.
The salsa offers a balance of tartness from the tomatillos and lime juice with a subtle earthy spice from cumin and heat from jalapeño. It pairs well with tortilla chips, tacos, grilled chicken, or seafood. The salsa is chilled before serving to let flavors develop further.
For those without an immersion blender, a food processor can be used as an alternative. The recipe may also be adapted by roasting the ingredients before simmering to add a smoky note.
Ingredients
- 1 pound tomatillos , husked and quartered
- 1/2 cup white onion , roughly chopped
- 2 cloves garlic , roughly chopped
- 1 jalapeño , roughly chopped
- 1/4 cup cilantro , packed leaves and stems
- 1/2 teaspoon cumin
- 1 1/2 teaspoons salt fine sea salt
- 2 cups water
- 1 tablespoon lime juice
Instructions
- Combine chopped tomatillos, white onion, garlic, jalapeno, cilantro, cumin, fine sea salt, water and lime juice in a heavy bottom saucepan.
- Bring to a rolling boiling, then reduce heat and simmer for 15 minutes, or until tomatillos are tender and starting to fall apart.
- Remove from heat and allow to cool slightly.
- Using an immersion blender, blend to desired texture.
- Transfer to an airtight container and chill for 1-2 hours or until ready to serve.

Notes
