Description

This salsa verde starts with fresh tomatillos cleaned and cooked either by boiling or broiling until tender. After cooling, the tomatillos are combined in a blender or food processor with chopped white onion, cilantro leaves, minced garlic, freshly squeezed lime juice, chopped jalapeño peppers with seeds removed for milder heat, and salt. The mixture is blended to a smooth consistency.

The resulting salsa verde showcases a balance of tartness from tomatillos and lime, herbal brightness from cilantro, pungency from garlic and onion, and moderate heat from jalapeño peppers. Adjusting the amount of jalapeño allows control over spiciness. It typically serves as a condiment or sauce to accompany Mexican dishes such as tacos, grilled meats, or eggs.

  • 6 tomatillo approximately 2 pounds
  • 3/4 cup white onion chopped
  • 3/4 cup cilantro leaves
  • 2 garlic chopped, cloves
  • 1 lime freshly juiced
  • 1-2 jalapeno pepper stemmed, seeded, and chopped
  • 1/2 teaspoon salt

Instructions

  1. Clean tomatillos by removing the husks and rinsing well. Place tomatillos in a saucepan, cover with water. Bring to a boil and simmer for 5 minutes, turn the tomatillos to ensure even cooking OR
  2. Halve the tomatillos and broil (skin side up) for 5-7 minutes. Let cool.
  3. When the tomatillos are cool enough to handle, remove the stems and put all the ingredients in a blender or food processor.
  4. Now comes the most important part, taste your sauce! Every jalapeño has a spicy life of its own. Some super hot and others not as potent. I seed my jalapeños and start adding slowly. I usually end up using one whole chili pepper, adjusting my recipe to the flavor I like.
