Tomato and White Bean Soup

Ingredients

  • 2 tablespoon olive oil
  • 1 leek
  • 1 tablespoon mixed herbs oregano, basil, thyme, dried
  • 2 garlic cloves
  • 1 teaspoon smoked paprika sweet
  • 1 teaspoon cumin
  • 14 oz cannellini beans 400g
  • 14 oz canned tomato 400g, chopped
  • 3 ½ cups vegetable stock 800 ml
  • spinach a handful
  • harissa for a spicy version

Instructions

  1. Wash, and finely chop the leek and mince the garlic.
  2. Using a large pot, heat some olive oil and sauté the leek, until it softens and begins to brown.
  3. Next, add the dried herbs, minced garlic, cumin powder, and sweet paprika, and cook for 2-3 minutes.
  4. Pour in the chopped canned tomatoes and simmer for approximately 8 minutes over medium heat.
  5. Then, add the vegetable stock and cannellini beans.
  6. Allow the mixture to simmer, then add the fresh or frozen spinach, and a pinch of salt. Cook for an additional 2 minutes before turning off the heat.
  7. Garnish with fresh parsley, or basil and serve with crusty bread.
  8. Adjust with salt and pepper to taste.
