Tomato Carrot Soup Recipe

Cozy up with a bowl of this creamy tomato carrot soup. It makes a delicious lunch or light dinner and tastes great with grilled cheese. It's easy to make with just a few simple ingredients, and it's ready in just 30 minutes!

Ingredients
- 2 tablespoons olive oil
- 4 medium carrots sliced
- 1 medium onion chopped
- 4 cloves garlic smashed
- 2 cups chicken stock or vegetable stock
- 28-ounce ounce can crushed tomatoes
- 1-2 teaspoon salt see notes
- 1 teaspoon dried thyme
- ½ cup cream
- Minced basil or parsley to serve
Instructions
- Heat the oil in a large pot over medium-high heat. Add the carrots and onion and cook until the onion is translucent, about 5 minutes. Add the garlic and cook for one minute more.
- Add the tomatoes, stock, salt, and thyme and bring the pot to a boil. Lower the heat and simmer, uncovered, for 10 minutes, until the carrots are soft.
- Working in batches, blend the soup until it's smooth then return it to the pot. (You can also use an immersion blender.)
- Stir the cream into the soup then season to taste with extra salt and pepper, if needed.
Notes
- In the pictures, we've shown the soup with some sauteed carrots on top. This is mostly so you can easily see what's in the soup. But it's also a nice way to serve the soup if you want to make it extra pretty.
