Tomato feta green bean salad
Description
This tomato feta green bean salad features green beans trimmed, halved, and blanched briefly to retain a crisp-tender snap. After cooling in ice water to preserve color and texture, the beans are combined with fresh chopped tomatoes and cubes of feta cheese. The dressing made from fresh garlic, olive oil, fresh lemon juice, salt, and black pepper brings brightness and a touch of acidity that complements the natural sweetness of the vegetables.
The salad is allowed to marinate for at least 10 minutes, or up to 24 hours, to enhance the flavors and tenderize the green beans slightly. Adding the feta at the end retains its crumbly texture and sharpness, though it can be added earlier for a creamier effect. This salad serves well chilled as a light side dish or a refreshing addition to a picnic meal.
Ingredients
- 500 g (1lb) green beans trimmed and halved
- 250 g (½lb) tomato chopped
- 1 cup feta cheese cubed
For the dressing
- 1-2 garlic finely grated/chopped, cloves
- 2 tbsp olive oil
- 2 tbsp lemon juice fresh
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Add the green beans and cook for 5 minutes. Remove and place in a bowl of ice water to stop the cooking immediately. Drain and add to a bowl.
- Mix the dressing ingredients together then pour over the green beans. Mix well then allow to marinade for at least 10 minutes but up to 24 hours covered in the fridge. You can add the feta cheese at this stage as well if you prefer.
- When you're ready to serve, add the feta cheese and tomatoes, toss well and serve.
