Tomato Feta Salad

This Tomato Feta Salad is so easy to make and only requires a couple of ingredients. It’s a perfect side salad for any Mediterranean dinner or serve it up as a topping for steak, chicken or fish.

Ingredients

  • 2 pints cherry tomato red or a medley
  • ¾ cup red onion small-diced
  • 2 tablespoons champagne vinegar
  • 3 tablespoons olive oil
  • teaspoons kosher salt
  • ½ teaspoon black pepper freshly ground
  • 2 tablespoons basil chopped, fresh leaves
  • 2 tablespoons flat-leaf parsley chopped, fresh
  • ¾ pound feta cheese

Instructions

  1. Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well.  Dice the feta into a ½- to ¾-inch dice, crumbling it as little as possible.  Gently fold it into the salad and serve at room temperature.

Notes

  • Feel free to swap cherry tomatoes for grape tomatoes or diced heirloom tomatoes.
