  • 3 tomato
  • 1/2 onion small
  • 1 jalapeño
  • 1 garlic clove
  • salt to taste

Instructions

  1. Rinse and de-stem the tomatoes.  Roast the tomatoes in the oven at 400F for 20-30 minutes.
  2. Add the roasted tomatoes to a blender along with 1/2 onion, 1 garlic clove, and only 1/4 of the jalapeno.  Pulse blend until combined.
  3. Taste for heat level. Add another 1/4 of the jalapeno if you want additional heat. Keep adding additional quarters of the jalapeno until you find a heat level that works for your taste buds.
  4. Salt to taste.  Serve immediately.
  5. Store leftovers in an airtight container in the refrigerator.

Notes

  • Simmer the salsa with a little oil over medium heat for 5-10 minutes to deepen flavor if using out-of-season tomatoes.
  • Add jalapeño pepper gradually to adjust heat to your preference.
  • Roasting can be done on the stovetop by pan-roasting if an oven is unavailable.
  • Substitute serrano peppers for jalapeño for increased spiciness, noting the difference in heat level.
