Description
This recipe uses ripe Roma or plum tomatoes which are chopped and combined with brown sugar, lemon juice, grated fresh ginger, salt, and warming spices like cumin and crushed red pepper in a saucepot. The mixture is brought to a boil and then simmered gently for 1 to 1.5 hours, stirring to prevent burning and reduce to a thick, glossy jam consistency.
The resulting tomato jam balances sweetness, acidity, and a subtle spice heat, making it a versatile accompaniment for meats, cheeses, or sandwiches. Once cooled, it can be preserved in jars and refrigerated, frozen, or canned.
Tomato jam keeps refrigerated for up to two months or frozen for up to six months. For variations, cooked crumbled bacon can be added before simmering for a smoky flavor twist. This jam adds a bright, tangy, and slightly spicy note to meals.
Ingredients
- 2 pounds tomatoes roma or plum, ripe
- ¾ cup brown sugar
- ¼ cup lemon juice
- 1 tablespoon ginger grated
- 1 ½ teaspoons salt
- ½ teaspoons cumin ground
- ½ teaspoon crushed red pepper
- ½ teaspoon garlic powder
Instructions
- Chop the tomatoes and remove any loose seeds. Grate the fresh ginger.
- Set out a medium saucepot. Add all the ingredients. Bring to a boil.
- Lower the heat and simmer for 1 – 1 ½ hours, stirring regularly, so it doesn’t burn on the bottom.
- Once the tomato jam looks thick and glossy, turn off the heat. Place in jars and either can, freeze, or refrigerate.

- Store refrigerated tomato jam for up to 2 months or freeze for up to 6 months.
- For a bacon-flavored variation, add 1 cup of cooked, crumbled bacon to the pot before simmering.
