Description
This Tomato Pie recipe arranges peeled tomato slices that have been salted and drained to reduce excess moisture, preventing sogginess, on a prebaked crust. Chopped basil and green or red onions bring aromatic herbal and mild pungent notes to the filling. A mixture of shredded mozzarella and cheddar cheese combined with mayonnaise (or a mayo and Greek yogurt blend) creates a creamy topping that melds with the tomatoes during baking. Parmesan sprinkled on top browns to a golden finish, enhancing the textural contrast.
Baking at 350 degrees Fahrenheit allows the cheeses to melt and slightly brown while releasing fullness of flavor. After removing from the oven, resting the pie for at least 15 minutes enables the filling to set for easier cutting and serving. The outcome is a savory, richly textured pie that balances the brightness of tomatoes with creamy, cheesy layers, suitable as a light meal or side dish during tomato season.
Ingredients
- 5 Roma tomato peeled and sliced
- 10 basil chopped, fresh leaves
- 1/2 cup green onion (or red onion), chopped
- 1 inch pie crust pre-baked
- 1 cup mozzarella cheese shredded
- 1 cup cheddar cheese freshly shredded
- 3/4 cup mayonnaise (or half mayo, half Greek yogurt)
- 2 Tablespoons Parmesan Cheese freshly grated
- salt freshly ground
- black pepper freshly ground
Instructions
- Preheat oven to 350 degrees F.
- Place the tomatoes in a colander in the sink in a single layer. Sprinkle with salt and allow them to rest for 10 minutes.
- Use a paper towel to pat-dry the tomatoes and make sure most of the excess juice is out. (You don't want wet (juicy) tomatoes or your pie will turn out soggy).
- Layer the tomato slices, basil, and onion in pre-baked pie shell (see my note above in the post about how I prepare the pie crust.) Season with salt and pepper.
- Combine the grated cheeses and mayonnaise or Greek yogurt together.
- Spread mixture on top of the tomatoes and sprinkle parmesan cheese on top.
- Bake for 30 minutes or until lightly browned. Allow to rest for at least 15 minutes before cutting and serving.
