Tomato Tortellini Soup
Description
This soup starts by simmering a combination of creamy tomato soup, Italian-style diced tomatoes, and heavy cream to create a balanced and flavorful base. The use of heavy cream softens the acidity of the tomatoes and lends a velvety texture to the broth. Adding frozen cheese tortellini provides a tender, chewy element packed with cheesy filling.
The soup is cooked gently so the tortellini becomes tender without breaking apart, absorbing subtle tomato and cream flavors. Parmesan cheese stirred in at the end adds a savory, slightly nutty note and enriches the broth.
Garnishing with chopped fresh parsley can add a mild herbal freshness that brightens the rich soup. This recipe offers a hearty yet approachable meal that pairs well with crusty bread or a light salad to round out the meal.
