Tony's Melt-In-Your-Mouth Grilled Brussels Sprouts

These grilled Brussels sprouts are cooked with sliced onions and olive oil, seasoned simply with garlic powder, salt, and pepper, and enclosed in foil packets to steam-grill to tender, flavorful vegetables with slightly caramelized edges. The method yields a soft texture with a subtle smoky char and aromatic seasoning.

Description

Tony's Melt-In-Your-Mouth Grilled Brussels Sprouts involve halving fresh Brussels sprouts and thickly slicing yellow onion, then tossing them with olive oil, garlic powder, salt, and freshly ground pepper. The mixture is sealed tightly in foil packets, with holes poked to release steam during cooking. The packets are placed over direct heat on a grill preheated to 400°F and cooked for about 20 to 25 minutes.

The foil pouch steams and grills the vegetables simultaneously, softening the Brussels sprouts and onions while imparting a mild char and concentrated flavor. The seasoning is simple but effective, allowing the natural sweetness and earthiness of the vegetables to shine.

These grilled Brussels sprouts make a tender side dish with a balance of savory, aromatic, and lightly caramelized flavors. Adjust seasoning to taste before serving as desired.

The recipe can be doubled by making two foil packets to ensure even cooking and to serve more people without crowding the packet.

Ingredients

Servings
  • ½ pound Brussels sprouts cut in half
  • ½ yellow onion cut into thick slices
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt plus more to taste
  • salt freshly ground
  • black pepper freshly ground

Instructions

  1. Preheat the grill to 400 degrees. Wash your brussels sprouts and pat them dry.
  2. Place brussels and onion slices in a large bowl, then drizzle them with olive oil, garlic powder and salt and pepper. Next add brussels onto a large piece of foil, then add another large piece of foil on top. Seal the edges by folding a piece of foil together. Use a fork or knife to poke a hole at the top of the foil to allow some steam to escape. Place over direct heat on the preheated grill and grill for approximately 20-25 minutes. Serve immediately, adding more salt and pepper if necessary.

Notes

  • Double the recipe and make two foil packets to serve 4 and ensure even cooking.
  • Poke holes in the foil packets to allow steam to escape and prevent sogginess.
  • Adjust salt and pepper to taste after grilling for best flavor balance.
