Description
This dish begins with cooking Italian sausage and diced onion until the sausage is browned and onions softened. Garlic is added briefly before stirring in cream cheese, tomato sauce, shredded mozzarella, grated Parmesan, and fresh baby spinach. Once the spinach wilts, cheese tortellini are mixed into the sauce and then transferred to a casserole dish.
The top is sprinkled with additional mozzarella and Parmesan cheese, then baked at 375°F until the cheese is melted and the sauce bubbles. The sausage adds spiced, meaty richness that complements the creamy tomato base and cheeses. The tortellini absorb the flavors while retaining some bite, and the spinach provides freshness and color.
This baked tortellini works well as a main course, suitable for casual dinners and family meals. It can be garnished with fresh parsley if desired. Leftovers store well in the refrigerator for three to four days, making it practical for advance meal prep or multiple servings.
Ingredients
- 1 pound Italian sausage (as spicy as you like it)
- ½ white onion diced
- 5 cloves garlic finely minced
- 8 ounces cream cheese cut into pieces
- 1 (24-oz jar) tomato sauce
- 2 cups mozzarella cheese freshly shredded and divided
- 1 cup Parmesan Cheese divided, freshly grated
- 1 cup baby spinach packed
- 1 (19-oz bag) cheese tortellini fresh
Instructions
- Preheat the oven to 375 degrees Fahrenheit.
- Add the sausage and onion to a large skillet and crumble and cook until the sausage is no longer pink and the onions are translucent.
- Drain the excess grease from the pan then add the garlic and cook for 30 seconds.
- Stir in the cream cheese until fully melted then stir in the tomato sauce, 1 ½ cup of the mozzarella, ½ cup of the parmesan and spinach.
- Once the spinach has wilted, stir in the tortellini and pour it into a 9x13-inch casserole dish and spread it out.
- Sprinkle the remaining mozzarella and parmesan on top then bake for 20-25 minutes or until the cheese is fully melted and the sauce is bubbly.
- Serve with freshly minced parsley for garnish if desired.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
