Tortellini Pasta Salad

A delicious mixture of cheese tortellini, cherry tomatoes, red onion, pepper and pearl mozzarella tossed in Italian dressing. This Tortellini Pasta Salad is the perfect cold pasta salad!

Ingredients

  • 16 ounces cheese tortellini dry
  • 1 cup Italian dressing
  • 1 cup cherry tomato halved
  • 3 ounces salami diced
  • cup red onion diced
  • ½ red pepper diced
  • ½ green pepper diced
  • 8 ounces mozzarella cheese pearl

Instructions

  1. Bring a medium pot of water to a boil and cook tortellini according to package directions.
  2. Cool completely by running under cold water.
  3. Combine all ingredients, cover and refrigerate for 2 hours before serving.

Notes

  • For best results, transfer leftover pasta salad to an airtight container and store in the fridge for 2-3 days. You can also cover the bowl of salad tightly in plastic wrap and store it in the refrigerator that way!
