Description
Tortellini Salad mixes cooked cheese tortellini with a variety of fresh and canned ingredients including cherry tomatoes, artichoke hearts, white beans, red onion, and pepperoncini. The fresh arugula and torn basil add peppery and herbal notes. The dressing, combined with Italian dressing and optional Parmesan cheese and red pepper flakes, enhances the flavors while maintaining lightness. This salad balances the richness of cheese tortellini with the brightness of fresh herbs and tangy elements.
Cooking the tortellini al dente and allowing it to cool ensures the pasta doesn't become mushy when tossed with the dressing and vegetables. The salad can be served right away to retain the crispness of the greens or stored in the refrigerator for up to four days as the flavors meld.
It’s suitable as a main dish salad for a quick lunch or a side salad alongside grilled proteins. Adding freshly grated Parmesan at serving gives an optional salty accent.
Ingredients
- 18 ounces cheese tortellini or vegan tortellini
- Italian dressing
- 2 cups cherry tomato halved
- 1 artichoke hearts 14-ounce can, drained and chopped
- 1 cup White beans drained and rinsed, cooked
- ½ cup red onion thinly sliced
- 5 Pepperoncini stemmed and chopped
- 2 cups arugula fresh
- 1 cup basil torn, plus more for garnish, fresh
- Parmesan Cheese optional, or pecorino cheese
- red pepper flakes optional
Instructions
- Cook the tortellini according to the package directions until al dente. Drain and let cool.
- Prepare the dressing according to the instructions in this recipe.
- In a large bowl, combine the tortellini, tomatoes, artichokes, beans, onion, and pepperoncini. Add half the dressing and toss to combine. Add the arugula and basil and toss again. Season to taste and add Parmesan, red pepper flakes, and more dressing, if desired. Garnish with more fresh basil. Serve right away or store in the fridge for up to 4 days.
Notes
- Use fresh tortellini from the refrigerated section for best texture and flavor.
