  • 8 cups chicken stock or broth
  • 2 cups water
  • 2 (9-ounce) each package tortellini or 1 (20-ounce) package refrigerated tortellini, dried
  • 2 tablespoons parsley chopped, fresh
  • 1/2 /2 teaspoon black pepper ground
  • 1 teaspoon kosher salt
  • Parmesan Cheese optional, freshly grated

Instructions

  1. Melt butter in Dutch oven over medium-low heat. Add the garlic, celery, carrot and onion to the butter and cook until the vegetables have softened, about 5 minutes, stirring occasionally.
  2. Pour in the chicken broth and water and stir to combine. Bring to a boil, reduce the heat and stir in the tortellini. Cover and simmer until the tortellini are tender, following the package directions.
