Tortilla Pizza
Description
The Tortilla Pizza recipe uses two-inch flour tortillas layered with pizza sauce, shredded mozzarella cheese, and oregano. Toppings of sliced olives and mushrooms, along with crushed red pepper flakes, provide classic pizza flavors with a bit of heat. The assembly is placed on parchment paper and transferred onto a preheated pizza stone or baking sheet at 425°F.
Baking for 5 to 7 minutes crisps the tortilla edges and bubbles the cheese, producing a thin crust that is crispy on the outside but tender with melted cheese and toppings inside. The layering technique ensures an evenly distributed flavor and texture.
This pizza is best served immediately for optimal crispiness. It makes a quick and flexible snack or light meal alternative to traditional pizza.
Leftover slices can be refrigerated in an airtight container for 3-4 days and reheated in an oven or toaster oven at 350°F to restore crispness and melt the cheese again.
Ingredients
- 2 inch flour tortillas
- ½ cup pizza sauce divided
- ½ cup mozzarella cheese divided, shredded
- ½ teaspoon oregano divided
- ¼ cup olive sliced
- ¼ cup mushrooms sliced
- ¼ teaspoon crushed red pepper
Instructions
- Preheat the oven to 425°F. Place a baking sheet or pizza stone, if you have one, in the oven while it's preheating.
- Place one tortilla on a piece of parchment paper. Spread ¼ cup of the pizza sauce evenly over the tortilla. Sprinkle ¼ cup of the mozzarella cheese over the pizza sauce. Season with ¼ teaspoon of the oregano.
- Place the second tortilla on top and repeat with the remaining pizza sauce, leaving a small border around the edge for the crust, then add the remaining cheese and the remaining oregano.
- Add the sliced olives, sliced mushrooms and red pepper flakes, or your desired pizza toppings, on top of the cheese.
- Carefully transfer the assembled tortilla pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for about 5-7 minutes or until the tortilla edge is crisp, and the cheese is melted and bubbly. Use a pizza cutter to slice the pizza into 4 or 6 slices and enjoy immediately.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat in an oven or toaster oven at 350°F for about 5 minutes to restore crispness.
