These tater tot nachos make a fun family dinner, but they're also perfect for serving up as an appetizer or during the big game. Feel free to add your favorite toppings!

Ingredients
- 32 ounces tater tots
- 1 1/2 cups cooked leftover taco meat
- 2 cups shredded cheddar
- 1/4 cup guacamole more or less to taste
- 1/4 cup sour cream
- 1/4 cup pickled jalapeno slices
- 1/4 cup diced tomatoes
- cilantro for garnish

Instructions
- Bake the tots according to package directions on a large, parchment lined baking sheet in a single layer.
- When the tots have five minutes remaining, remove from the oven and sprinkle on the meat and cheese. Return to the oven to finish cooking.
- Remove from the oven and drop spoonfuls of guacamole and sour cream over the nachos. Sprinkle with the jalapeno, tomatoes, and cilantro.
- Serve hot.
Notes
- If you don't have leftover taco meat, you can use a pound of ground beef + taco seasoning to make the meat. You'll likely not need the full amount, but use as much as you like.
- This recipe is a great guide, but feel free to add more or less of your favorite toppings. You really can't mess up nachos!
