Toyomansi sauce (Calamansi Soy Sauce)
Description
Toyomansi sauce is a simple Filipino condiment blending soy sauce and calamansi lime juice as the base, enhanced with minced garlic and sliced mild red and green chilies. The citrus acidity from the calamansi balances the salty depth of the soy, creating a bright and savory sauce. The addition of aromatic garlic and colorful chilies adds a subtle pungency and mild heat, adjustable according to taste. It’s prepared by mixing all ingredients and can be used immediately or left to infuse briefly. This sauce works well as a dipping sauce for dumplings or as a marinade for meats and fish, imparting a fresh, vibrant flavor.
Ingredients
- 4 T soy sauce The quantities for soy sauce and the acid (calamansi) aren't set in stone- feel free to experiment and use more or less depending on how salty and tangy you want your food, light
- 4 T calamansi lime juice I usually eyeball it and use 6 small calamansi for 4T of soy sauce. Substitute: key lime, Meyer lime, or other limes if you can't these 2, lemon and, as a last resort, white wine or rice vinegar, seeds strained out
- 2-3 cloves garlic If you're short on time, just smash the garlic clove with the back of your knife and skip the mincing, peeled and minced
- ⅛ red chilli Substitute: Bird's eye chilli is traditional but it's spicier so I used something milder to accommodate younger children and the elderly. (Personally I prefer the smaller bird's eye chilli/ chilli padi though!, big, sliced
- ⅛ green chilli Added for colour, feel free to omit, big, sliced
- onion sliced, or shallots, optional
Instructions
- Mix all the ingredients together.
- You can use it straight away or leave to infuse for 10 minutes first.
- You can immediately enjoy calamansi soy sauce with your dumplings etc or pour it over your meat/ fish to marinade.
Notes
- You can adjust the amount of garlic and chili to taste, but adding too much may thicken the sauce and make dipping difficult.
- This sauce is often made freshly and used immediately, but allowing it to rest for a few minutes intensifies the flavors.
- Keeping calamansi seeds can allow you to grow your own tree, useful for many Southeast Asian recipes.
