Trader Joe's Cauliflower Gnocchi With Peas and Turkey Bacon

This dish features golden pan-fried Trader Joe's frozen cauliflower gnocchi combined with caramelized onions, peas, and crisp turkey bacon. The mix is seasoned with Italian herbs and finished with Parmesan cheese, creating a lightly crisp, savory gnocchi meal that balances vegetables and smoky protein in a simple skillet preparation.

Description

Start by cooking turkey bacon until crispy and chopping it into pieces. Onions are sautéed in olive oil over medium heat until they turn golden brown and near caramelized, then peas and Italian seasoning are added to the pan for gentle warming and seasoning.

The cauliflower gnocchi are cooked separately in olive oil over medium-high heat until browned on all sides, providing a firm exterior and tender interior. The onion, pea, and bacon mixture is combined back into the pan with the gnocchi, and Parmesan cheese is stirred in to add a sharp, salty finish.

This quick skillet meal delivers contrasting textures from crisp bacon, tender gnocchi, and soft, sweet onions, making it a convenient and filling dish for lunch or dinner. Additional Parmesan can be sprinkled on top when serving.

Microwaving is an effective method for cooking the turkey bacon quickly, while frying offers an alternative. Adjust salt and pepper to taste throughout cooking.

Ingredients

Servings
  • 12 ounce cauliflower gnocchi frozen; Trader Joe's brand; bag
  • 3 lices turkey bacon cooked, crisp
  • 3 Tablespoons olive oil divided
  • 1 yellow onion large
  • 1/2 cup peas frozen
  • 1 teaspoon Italian seasoning dried
  • salt sea salt
  • black pepper sea salt
  • 2 Tablespoons Parmesan Cheese grated; plus more for serving

Instructions

  1. Cook turkey bacon using instructions in the notes. Once cooked, chop the bacon into small pieces and set aside.
  2. Meanwhile, heat 2 Tablespoons of olive oil in a large skillet over medium-high heat. Add the chopped onions and cook until they begin to brown, 3 to 5 minutes. Season with salt and pepper to taste, reduce the heat to medium and continue to cook, stirring occasionally, until the onions are golden brown and almost caramelized, about 10 minutes more. At this point, stir in the frozen peas and Italian seasoning and transfer to a small bowl.
  3. Using the same skillet, add the remaining 1 Tablespoon oil over medium-high heat. Add the frozen cauliflower gnocchi and cook, tossing occasionally, until they’re golden brown on all sides, about 5-10 minutes. Gently add in the onion mixture, chopped bacon and parmesan. Serve warm, sprinkled with additional parmesan.

Notes

  • For quick turkey bacon, microwave slices between paper towels for 2 to 4 minutes until crisp, or follow package stovetop instructions.
  • Use medium to low heat when cooking onions to achieve almost caramelized color without burning.
  • Shore up seasoning at different stages with salt, pepper, and Italian seasoning for balanced flavor.
  • Additional Parmesan cheese can be added when serving for extra richness.
