Traditional Meatloaf Recipe

This traditional meatloaf uses lean ground beef mixed with breadcrumbs, grated onion, garlic, herbs, and binding ingredients for moistness and structure. It bakes with a ketchup-based glaze that caramelizes on top, yielding a tender loaf with flavorful seasoning and a slightly sweet finish from the glaze. Resting before slicing helps keep the meatloaf intact and juicy.

Description

The Traditional Meatloaf Recipe combines 90-92% lean ground beef with eggs and gluten-free breadcrumbs to bind the mixture. Grated onion and garlic cloves meld into the meat for a uniform texture, while Worcestershire sauce, ketchup, fresh parsley, paprika, Italian seasoning, salt, and pepper provide depth of flavor. The mixture is gently combined to avoid toughness.

Shaped and placed in a lined pan, the meatloaf bakes at 375°F for about 40 minutes before being topped with a glaze made from ketchup, white wine vinegar, brown sugar, and spices. It continues baking for 10 minutes to set the glaze, then rests for 10-15 minutes off heat, allowing juices to redistribute and preventing crumbling when sliced.

Serve slices drizzled with pan juices for added moisture and flavor. This meatloaf is suitable for a hearty main dish and pairs well with classic sides.

Use lean ground sirloin to reduce grease and achieve a balanced fat level. Avoid overmixing the mixture to keep the meatloaf tender. Grating the onion rather than chopping yields a finer texture. Parchment lining simplifies removal and cleanup. Allowing it to rest before slicing preserves shape and juiciness.

Ingredients

Servings

Meatloaf

  • 2 lb ground beef lean
  • 2 egg
  • 1 cup breadcrumbs (I used gluten-free)
  • 1 onion grated, medium
  • 3 garlic cloves
  • ¼ cup parsley fresh chopped
  • 1-2 Tablespoon Worcestershire sauce
  • 3 Tablespoon ketchup
  • ½ cup milk
  • ½ teaspoon paprika
  • 2 teaspoon Italian seasoning
  • ¼ teaspoon black pepper ground
  • 2 teaspoon salt

Meatloaf Glaze

  • ½ cup ketchup
  • 1 teaspoon white wine vinegar
  • 2 Tablespoon brown sugar (or sweetener of choice)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Meatloaf

  1. Preheat oven to 375 F and line a meatloaf pan with parchment paper.
  2. In a large mixing bowl, mix the ground beef, eggs, breadcrumbs, onion, garlic, milk, ketchup, Worcestershire sauce, parsley, paprika, Italian seasoning, salt and pepper. Mix well until everything is well combined.
  3. Add meat mixture to the pan and gently press down so the top is flat. Bake the meatloaf for about 40 minutes.

Meatloaf Glaze

  1. Mix the ingredients for the glaze in a small bowl. Spread the glaze over the meatloaf and bake for an additional 10 minutes. Let the meatloaf rest for about 10 minutes before slicing. Drizzle the juices from the pan over each slice when you are serving.

Notes

  • Choose lean ground beef (90-92% lean) to control grease content in the meatloaf.
  • Mix ingredients thoroughly but avoid overmixing to keep the texture tender, not dense.
  • Use grated onion for a finer texture or swap for onion powder if preferred.
  • Line the pan with parchment paper to ease removal and cleanup.
  • Bake at 375°F to ensure even cooking without drying or cracking.
  • Rest the meatloaf for 10-15 minutes after baking to redistribute juices and firm up slices.
  • Serve with pan juices for added moisture and flavor.
