Tropical Chia Pudding

This Tropical Chia Pudding is easy to whip up the night before breakfast and is vibrantly delicious (and healthy!).

Ingredients

Pudding:

  • 1/4 cup honey
  • 1 cup coconut milk normal or light, divided
  • 1 cup Greek yogurt plain, any percentage
  • 1 tsp vanilla extract
  • 1/4 cup chia seeds black or white

Tropical Purée:

  • 1 1/2 cups Mango roughly chopped
  • 1/2 cup pineapple roughly chopped
  • 1 tbsp sugar
  • 1 tbsp lime juice fresh

Optional garnishs:

  • 1 tbsp coconut shredded
  • 1 tsp lime zest
