A simple and flavorful recipe that's sure to be a favorite.

Ingredients
- 3 tomato or regular tomatoes, washed and diced, ripe, heirloom
- 1 cup pineapple don't use the canned stuff, diced fresh
- 1/2 jalapeño deseeded and minced (if you like it a little spicier, add the whole pepper minus the seeds, or add the seeds if you're a daredevil
- 1/4 cup parsley I used leaves from about 4 sprigs, chopped, fresh
- 1/2 tsp salt or to taste if you like it salter
- 2 tsp olive oil
Instructions
- Combine all ingredients and gently mix together. Let sit in the fridge for about an hour to to let the flavours marry together, but if you're hungry, it's great fresh as well. Serve with tortilla chips, and enjoy!
