Truffle Fries

Truffle fries are one of those things that make you feel really fancy when you order them at a restaurant, but now you can make them at home with this easy recipe! Simply deep fry, air fry, or oven bake the fries, then toss them in truffle oil and parmesan cheese for that incredible, salty, umami flavor that we all know and love about truffle fries!

Ingredients

  • 1 pound Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons white truffle oil
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh parsley leaves chopped

Instructions

Prepare the fries.

  1. Slice the potatoes into ¼ inch french fries.
  2. Optional: soak the cut potatoes in a large bowl of cold water for 1 hour, for extra crispy fries. Remove the potatoes from the water and completely pat dry with paper towels.
  3. Toss the potatoes in olive oil, then toss with salt and black pepper.

Cook them in the air fryer.

  1. Place in a single layer, with the fries not touching, in an air fryer basket. Air fry at 380°F for 16 minutes, flipping halfway through.
  2. If you’re cooking multiple batches of fries in an air fryer, remove the first batch of cooked fries and place them on a plate or cutting board. When you’re done with the last batch of fries, add all of the fries back to the air fryer (it’s okay if they’re overlapping at this point) and air fry for 1-2 minutes to heat them up. 

Or cook them in the oven.

  1. Evenly spread the seasoned fries out on a baking sheet lined with parchment paper. Bake at 425°F for 20-22 minutes, tossing halfway through. Remove from the oven when lightly browned and crispy.

Finish the fries.

  1. Remove the fries from the oven, or air fryer, and toss with the truffle oil, parmesan cheese, and parsley. Serve immediately.

Notes

  • To deep fry the french fries:

    Slice the potatoes into fries. Optionally soak the fries, or go straight to deep frying them. Heat the oil in a deep fryer to 300°F. Add the fries to the hot oil and cook for 3 minutes, shaking them halfway through the cooking time. Remove the fries from the oil. Turn the heat up on the deep fryer until the oil reaches 350°F. Once the oil is hot, add the fries back to the oil. Cook for 5-6 minutes, or until the edges are brown and the fries are crispy. Drain the fries and immediately toss them with the salt, black pepper, truffle oil, parmesan cheese and parsley.

  • To make this recipe with frozen fries:

    Prepare 1 pound (16 ounces) of frozen fries according to the package directions. These can be cooked in the oven, air fryer or deep fryer. Once the fries are cooked, immediately toss them with the truffle oil, grated parmesan cheese, fresh chopped parsley, salt, and black pepper. Serve immediately.

  • Leftover fries can be stored in the fridge in an airtight container for up to 5 days. I recommend reheating them in an air fryer at 400°F for 3-4 minutes. You can also heat them up in the oven at 400°F for 4-6 minutes.
  • For extra crispy french fries, always soak them before cooking. This will help remove some of the excess starch from the potatoes. And it will help the fries crisp up in the air fryer, oven or deep fryer.
  • You can cut the potatoes into fries ahead of time and leave them soaking in water until you’re ready to season and cook them. Always be sure to drain the cut potatoes and pat them dry completely before seasoning and cooking them.
  • Leave the potato skins on the potatoes to save time. This will also help the fries achieve an even crispier texture.
  • Do not season the potatoes with the salt until you’re ready to cook them in the air fryer or oven. Seasoning the potatoes with salt, then letting them sit for more than a couple of minutes, means the salt will pull moisture from the potatoes and the fries are more likely to come out of the air fryer or oven soggy.
