Tuna Avocado Salad

Tuna Avocado Salad combines creamy diced avocado with flaky albacore tuna, minced red onion, and crisp celery in a light dressing of Greek yogurt, Dijon mustard, and lemon juice. This chilled salad offers a fresh, tangy flavor balance with a smooth and chunky texture. Served within the avocado halves, it provides a convenient and visually appealing presentation suitable for a light lunch or snack.

Description

The Tuna Avocado Salad balances ripe avocado's creaminess with the mild flavor and firm texture of drained albacore tuna. The mix of minced red onion and celery adds crunch and sharpness, while Greek yogurt and Dijon mustard contribute a tangy creaminess tied together by fresh lemon juice. Scooping the diced avocado and folding it into the tuna mixture maintains the avocado's texture without overpowering the salad. Serving the salad inside the hollowed avocado halves adds an attractive, natural bowl. This no-cook salad can be quickly assembled and is best eaten soon after preparation to preserve the avocado's color and texture. Its combination of protein, healthy fats, and fresh ingredients makes it a satisfying, light option for warmer days or a quick meal.

Ingredients

Servings
  • 2 avocado halved and pitted
  • 1 ounce albacore tuna drained, white, in water
  • ¼ cup red onion minced
  • 1-2 celery chopped, stalk
  • 3 tablespoons Greek yogurt 2% fat
  • 1 tablespoon Dijon mustard
  • 1 lemon juiced
  • salt
  • black pepper
  • parsley chopped, for garnish

Instructions

  1. Scoop out avocados, leaving a small border. Dice avocado and set aside.
  2. In a large bowl mix together the tuna, red onions, celery, Greek yogurt, Dijon mustard and lemon juice. Season with salt and pepper. Fold in the diced avocado
  3. Spoon the tuna into the crevice of the halved avocados. Garnish with parsley, and enjoy!

Notes

  • Prepare the tuna salad base ahead of time, then add diced avocado just before serving to keep it fresh and prevent browning.
  • Store leftovers in an airtight container and refrigerate for up to 2-4 days, though freshness is best immediately.
