Tuna Rice Salad

Tuna Rice Salad is a cold dish that combines cooked basmati rice with a variety of fresh vegetables and canned tuna, dressed in a creamy mixture of mayonnaise, yogurt, lemon juice, and olive oil. The salad offers a mix of textures from crunchy peppers and peas to soft tuna chunks, with bright lemon flavor complementing the creamy dressing. It makes a refreshing and convenient meal or side dish.

Description

The Tuna Rice Salad uses cooked and cooled basmati rice as a base, mixed with finely chopped green onions and red bell pepper, canned corn, peas, and drained tuna. These components provide a range of textures from crisp vegetables to tender rice and flaky tuna. The dressing consists of mayonnaise, yogurt, lemon juice and zest, olive oil, milk, salt, and pepper, creating a tangy and smooth coating that ties the salad together.

The salad is assembled by breaking apart rice clumps and mixing all vegetables and tuna evenly before adding the dressing. The lemon juice and zest lend freshness, balancing the creamy elements from mayonnaise and yogurt. The olive oil adds a mild richness, and milk adjusts the dressing consistency.

This salad is suitable as a light lunch or a side dish and benefits from chilling to meld flavors before serving. It can be easily adjusted with more or less lemon or seasoning to taste.

Ingredients

Servings
  • 2 cups long grain basmati rice cooked, cold
  • 2 tablespoon olive oil
  • 1 lemon juice and zest
  • 3 green onion finely chopped
  • 1 red bell pepper finely diced
  • 1/2 cup corn canned or thawed
  • 1 cup pea canned or thawed
  • 2 cans tuna drained
  • 6 tablespoon mayonnaise
  • 4 tablespoon yogurt
  • 2 tablespoon milk
  • salt to taste
  • black pepper to taste

Instructions

  1. Break apart any clumps of the rice, then add in green onions, red bell pepper, corn, and peas.
  2. Add the drained flaked tuna to the mix. I like to break apart the tuna with a fork before dumping it in to make sure its not clumpy.
  3. Seperately, mix together the lemon juice and zest, olive oil, mayonnaise, yogurt, milk and salt and pepper to form your dressing.
