Turkey Butternut Squash Chili

Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced, small
  • 1 carrot diced
  • 1 celery diced, stalk
  • 2 cloves garlic minced
  • 1 teaspoon thyme minced, fresh
  • 2 cups butternut squash diced
  • 1 great northern beans drained and rinsed, canned
  • 1 package 10 ounces fully cooked turkey sausage patties, crumbled
  • 2 ½ cups chicken broth
  • ½ cup heavy cream
  • 2 cups kale chopped

Instructions

  1. Add the olive oil to a large stock pot or dutch oven set over medium heat. 
  2. Add the onion, carrot, and celery and saute for 2-3 minutes or until the vegetables are tender. 
  3. Next add the garlic and thyme and cook for an additional minute. 
  4. Add the butternut squash, great northern beans, turkey sausage, and chicken both. 
  5. Bring the chili to a boil and then reduce the heat to medium-low and simmer for 10 minutes. 
  6. Add the heavy cream and chopped kale and cook for an additional 2 minutes, or unil the kale is wilted. 
  7. Serve the chili topped with your favorite garnishes.
