Ingredients

  • 2 pounds ground turkey
  • 1 tablespoon olive oil
  • 1 ½ cup onion about 1 small onion, diced
  • 1 cup green bell pepper about 1 bell pepper, diced
  • 2 teaspoons garlic about 2 cloves, minced
  • 2 cups chicken broth
  • 1 (8-ounce) tomato sauce canned
  • 1 (15-ounce) diced tomatoes not drained, canned
  • 1 (15-ounce) pinto beans drained, canned
  • 1 (15-ounce) red kidney beans drained, canned
  • 3 tablespoons chili powder
  • 1 tablespoon oregano dried
  • 1 teaspoon cumin ground
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • ¼ teaspoon black pepper ground
  • ¼ teaspoon cayenne pepper

Instructions

  1. Add the 1 tablespoon olive oil to a large pot and heat over medium-high heat. Add the 1 ½ cup diced onion, 1 cup diced green bell pepper, and 2 teaspoons minced garlic,and cook until almost tender. Add in the 2 pounds ground turkey and cook until browned and no pink remains.
  2. Add in the 2 cups chicken broth, 1 (8-ounce) can tomato sauce, 1 (15-ounce) can diced tomatoes, 1 (15-ounce) can pinto beans, 1 (15-ounce) can red kidney beans, 3 tablespoons chili powder, 1 tablespoon dried oregano, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1 teaspoon salt, ¼ teaspoon ground black pepper, and ¼ teaspoon cayenne pepper. Stir to combine.
  3. Bring the chili to a boil, then reduce the heat to low and simmer it until it starts to thicken and flavors combine, about 30 minutes.
  4. Serve with the toppings of your choice.
