  • 1½-2 pounds ground turkey
  • 1 yellow onion diced
  • 2 celery chopped (about 1 cup, ribs
  • 1 tablespoon garlic about 3 cloves, minced
  • 1 (15 ounce can) red kidney beans ,rinsed
  • 1 (14.5 ounce can) Navy beans ,rinsed
  • 3 tablespoons chili powder
  • 1 teaspoon cumin ground
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups chicken broth
  • 1 (14.5 ounce can) diced tomatoes
  • 1 (15 ounce can) tomato sauce
  • 2 (4.5 ounce cans) diced green chiles
  • cheese for serving, shredded
  • sour cream for serving
  • cilantro for serving, chopped, fresh

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat. Add the 1½-2 pounds ground turkey and cook, breaking it apart with a large spoon or spatula, until browned, about 5 minutes.
  2. While the turkey is browning, dice the 1 yellow onion and chop the 2 celery ribs. Rinse the 1 (15 ounce can) red kidney beans and 1 (14.5 ounce can) navy beans under cold water and drain well.
  3. Once the turkey is cooked through, add the diced onion and chopped celery. Sauté for 3-5 minutes until softened. Drain any excess grease.
  4. Stir in the 1 tablespoon minced garlicc, 3 tablespoons chili powder, 1 teaspoon ground cumin, 1 teaspoon salt, and 1 teaspoon black pepper. Cook for 1 minute until fragrant.
  5. Pour in the 2 cups chicken broth, 1 (14.5 ounce can) diced tomatoes, 1 (15 ounce can) tomato sauce, rinsed beans, and 2 (4.5 ounce cans) diced green chiles. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 45-60 minutes, stirring every 10 minutes.
  7. Serve hot, topped with shredded cheese, chopped cilantro, and sour cream as desired.
