Description
Turkey Chili combines browned ground turkey with sautéed onions, celery, and garlic, seasoned with chili powder and cumin to create a flavorful base. Added beans and canned tomatoes build a robust texture and deepen the savory flavor. Simmering the mixture for 45 to 60 minutes allows the ingredients to blend thoroughly and develop a balanced chili profile. The result is a moderately thick stew with tender meat and soft vegetables.

Ingredients
- 1½-2 pounds ground turkey
- 1 yellow onion diced
- 2 celery chopped (about 1 cup, ribs
- 1 tablespoon garlic about 3 cloves, minced
- 1 (15 ounce can) red kidney beans ,rinsed
- 1 (14.5 ounce can) Navy beans ,rinsed
- 3 tablespoons chili powder
- 1 teaspoon cumin ground
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups chicken broth
- 1 (14.5 ounce can) diced tomatoes
- 1 (15 ounce can) tomato sauce
- 2 (4.5 ounce cans) diced green chiles

Instructions
- Heat a large pot or Dutch oven over medium-high heat. Add the 1½-2 pounds ground turkey and cook, breaking it apart with a large spoon or spatula, until browned, about 5 minutes.
- While the turkey is browning, dice the 1 yellow onion and chop the 2 celery ribs. Rinse the 1 (15 ounce can) red kidney beans and 1 (14.5 ounce can) navy beans under cold water and drain well.
- Once the turkey is cooked through, add the diced onion and chopped celery. Sauté for 3-5 minutes until softened. Drain any excess grease.
- Stir in the 1 tablespoon minced garlicc, 3 tablespoons chili powder, 1 teaspoon ground cumin, 1 teaspoon salt, and 1 teaspoon black pepper. Cook for 1 minute until fragrant.
- Pour in the 2 cups chicken broth, 1 (14.5 ounce can) diced tomatoes, 1 (15 ounce can) tomato sauce, rinsed beans, and 2 (4.5 ounce cans) diced green chiles. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 45-60 minutes, stirring every 10 minutes.
- Serve hot, topped with shredded cheese, chopped cilantro, and sour cream as desired.
