Turkey Cutlets with Parmesan Crust
Description
The turkey cutlets are seasoned with salt and pepper before being dipped in beaten egg whites, which helps the breadcrumb and Parmesan mixture adhere evenly. Cooking in a hot nonstick pan with butter and olive oil ensures a well-browned, crispy crust while keeping the meat moist. Each cutlet cooks about six minutes per side until cooked through.
This recipe balances the nuttiness of Parmesan with the mild flavor of turkey breast, making for a straightforward, protein-focused dish. Lemon wedges served alongside cut through the richness and add a fresh flavor element.
An alternative cooking method provided is the air fryer, which crisps the cutlets at 400 degrees Fahrenheit for 6-7 minutes, flipping once. This method offers a potentially lighter preparation with less added fat.
Ingredients
- 4 turkey breast cutlets (4 oz each)
- 2 large egg beaten, white
- 1/3 cup seasoned breadcrumbs
- 2 tbsp Parmesan Cheese
- kosher salt
- black pepper
- 1 tbsp butter
- 1 tsp olive oil
- lemon wedges for serving
Instructions
- Season cutlets with salt and pepper.
- Combine bread crumbs and Parmesan cheese in a medium bowl.
- In another bowl beat egg whites.
- Dip turkey cutlets in egg whites, then breadcrumb mixture, shaking off excess.
- Heat a large nonstick frying pan on medium heat. Add the butter and olive oil.
- When butter melts, add the cutlets and cook about 6 minutes on each side, until golden brown and cooked through. Serve with lemon wedges.
Notes
- To air fry, spray both sides of cutlets lightly with oil and cook at 400°F for 6–7 minutes, flipping halfway, until golden and no longer pink inside.
- Using block Parmesan for grating ensures fresher flavor and better texture in the crust compared to pre-grated cheese.
