Description
The Turkey Marinade features a blend of olive oil, soy sauce, and citrus juices and zest from lemon and orange, which provide acidity that tenderizes while adding brightness. A mixture of finely chopped fresh herbs—parsley, chives, sage, rosemary, and thyme—adds complexity and an aromatic herbal quality. Minced garlic imparts a pungent savoriness, while smoked paprika and sweet paprika offer a mild smoky depth and subtle sweetness. Salt and black pepper round out the seasoning.
This marinade is designed to thoroughly coat a whole thawed turkey, including under the skin, where the flavors can penetrate the meat during marinating. The balance of herbs, citrus, and savory notes complements poultry well and prepares the turkey for roasting, smoking, or grilling according to preference.
Allowing the turkey to marinate for 12 to 24 hours ensures the flavors develop fully. Before cooking, large herb or garlic pieces are removed to avoid burning during roasting.
Ingredients
- 1 cup olive oil
- 1/3 cup soy sauce
- 1/4 cup lemon juice
- 1/4 cup orange juice
- 1 teaspoon lemon zest
- 1 teaspoon orange zest
- 1/2 cup parsley finely chopped, leaves
- 1/4 cup chives thinly sliced
- 1/4 cup sage finely chopped, leaves
- 2 tablespoons rosemary leaves finely chopped
- 1/4 cup thyme chopped, leaves
- 1 tablespoon garlic minced
- 2 teaspoons smoked paprika
- 1 teaspoon paprika sweet
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Place all of the ingredients in a medium bowl. Whisk until well combined.
- Pour the marinade over a whole thawed turkey. Rub the marinade to coat all over the outside, then loosen the skin and rub some of the marinade under the skin.
- Let the turkey sit in the marinade for 12-24 hours.
- Scrape any large pieces of herbs and garlic off the marinated turkey so that they won't burn when cooked.
- Roast, smoke or grill the turkey as desired, then serve and enjoy.
