Turkey Shepherd's Pie

This Turkey Shepherd's Pie layers diced turkey and vegetables in a savory gravy, topped with mashed potatoes blended with cheddar cheese. The dish is baked until warmed through, creating a comforting casserole featuring tender turkey and veggies under a cheesy, creamy potato crust. It’s ideal for using leftover turkey in a satisfying home-style meal.

Description

Turkey Shepherd's Pie begins with sautéing onions, celery, and carrots in butter until soft, then adding minced garlic and diced turkey along with green beans or peas. Seasoned with salt, pepper, and thyme, the mixture is gently combined with savory gravy. This filling is spread evenly in a casserole dish while mashed potatoes mixed with cheddar cheese are layered on top, finishing with additional cheese sprinkled over the surface. Baking at 350°F for 30 minutes warms the dish thoroughly and melts the cheese topping.

The pie offers a pleasing contrast between the moist, flavorful turkey and vegetable filling beneath a smooth, cheesy potato layer with a lightly browned top. It repurposes cooked turkey into a hearty main course with balanced textures and mild seasoning.

Serving warm, this shepherd's pie is suited to casual family dinners or comfort food occasions. Leftover mashed potatoes are ideal, and using homemade or packet gravy provides flexibility. The recipe calls for a one-quart baking dish, producing a moderate-sized casserole.

  • 1 cup gravy try my 10-minute brown or chicken gravy!
  • 2 cups potato about 4 medium potatoes needed for this, mashed
  • 1 cup cheddar cheese grated

Instructions

  1. Preheat the oven to 350 degrees.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the onions, celery, and carrots. Cook uncovered, until the onions are soft and translucent. About 5 minutes.
  4. Add the minced garlic and cook for an additional minute.
  5. Add the turkey, corn, and green beans (or peas) in addition to the salt, pepper, and thyme.
  6. Gently stir in the gravy: If preparing a packet of gravy, cook that separately according to package instructions. Once thickened, add it to the skillet.
  7. Once the mixture is heated through, pour it into a one-quart casserole dish, spreading it into one even layer.

  9. Spread the potatoes in an even layer over turkey mixture and top with the remaining cheese.
  10. Cover and bake for 30 minutes. Serve warm, and enjoy!
